HOW DO you go about making your pancakes Irish?

For lovers of Jameson the answer is simple: add whiskey to the mix along with bacon and some maple syrup for good measure.

An official Jameson’s recipe, these Jameson whiskey bacon maple syrup pancakes are every bit as delicious as they sound and, more importantly, are super easy to make.

Here’s everything you need to know – eat/drink in moderation!

What you'll need:

For the syrup 

  • 8oz of thinly-sliced bacon.
  • 1 ½ cups of maple syrup.
  • 1 shot (25ml) of Jameson Irish Whiskey.

For the pancakes

  • 1 ½ cups flour
  • 1 tbsp sugar
  • ½ tsp salt
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 2 eggs
  • 1 ½ cups milk
  • 3 tbsp unsalted butter, plus more for cooking

How to make it:

For the syrup 

  • Dice the bacon and cook until crispy.
  • Mix the ingredients together in a saucepan and cook on a low heat.
  • Once it comes to a simmer take it off the heat and cover it with foil.

For the pancakes

  • Mix the flour, sugar, salt, baking soda, and baking powder in a medium-sized bowl using a whisk and form a well in the middle.
  • Melt the 3 tbsp butter in a small saucepan.
  • Crack the eggs into the well and add the milk and melted butter, whisking together until just combined.
  • Spoon large dollops of the batter into a greased pan – make them nice and thick.
  • Once the pancake has started to cook and the bubbles on top have burst, flip it over.
  • Stack the cooked pancakes on a plate and cover with foil to keep warm.
  • Serve the pancakes covered in the syrup mix.
